Irish Coffee Day ala Dead Rabbit

1 1/2 ounces Jameson original blended Irish whiskey
4 ounces fresh-brewed coffee
1/2 ounce rich Demarara syrup
Freshly whipped cream
Freshly ground nutmeg

Pour four ounces of fresh-brewed coffee into an absinthe glass. Add 1/2 ounce of the Demerara syrup and stir. Add 1 1/2 ounces of Jameson original blended Irish whiskey. Gently spread on a thin layer of whipped cream. Using a grater, garnish with fresh nutmeg shavings and serve.

Today is Irish Coffee Day. I was tempted to post this first thing in the morning, but it would have been too tempting to have one before heading off to work and deciding to just stay home and take a long weekend. As it is, since it is Friday, a bit of fortified coffee won’t do me any harm after work. Who needs to go to bed early tonight?

I did say that I was hoping to try to make all of these Drinking Holiday drinks with Absinthe, but in this case, I didn’t want to mess up perfection. Far be it from me to try improving a recipe from The Dead Rabbit. besides, their instructions even say to make this drink IN an Absinthe glass, at least in the recipe posted on Food Republic, so I’ll go with that.
