GFGFDF Cake (Good Fucking Gluten Free Devi’s Food Cake)

 
 

Ingredients

[for cake]
1 package Betty Crocker Gluten Free Devil’s Food Cake Mix
1 3.56 oz package Hershey’s Dark Chocolate Instant Pudding
1/3 cup Granulated Sugar
4 Large Eggs plus one Egg White (room temperature)
1 stick Unsalted Butter, softened
3/4 cup Almond Milk
1/2 Tbsp Vanilla Extract

[for frosting]
1 pound Confectioners Sugar
1 stick Unsalted Butter, softened
2 teaspoons Vanilla Extract
1/4 cup Full Fat Coconut Milk
2 bars Dark Chocolate, melted

 

Instructions 

[for cake]

Preheat the oven to 325 degrees F.
Mix the wet ingredients in a medium sized bowl.
In a large bowl sift together the dry ingredients.
Add the wet ingredients to the dry and beat on medium speed until completely combined.
Fill a cake pan(s) 2/3 of the way full.
Bake for about 40-45 minutes, until a toothpick inserted comes out clean.
 

[for frosting]

Combine half of the sugar with the butter and beat on low speed.
Add the wet ingredients and continue to beat.
Slowly add the rest of the sugar while mixing until combined.
Beat on medium-high speed for at least two minutes until the frosting is smooth and creamy. 
For chocolate frosting, add melted dark chocolate.
Frost cake with icing at room temperature.
